                                Walnut Loaf or Patties

  • 4 c fresh breadcrumbs
  • 2 c well cooked brown rice
  • 12 c sunflower seeds (ground)
  • 1 c walnuts or pecans, finely chopped
  • 1 12 t Celtic sea salt
  • 1 t basil

Whiz in blender

  • 1 12 c water
  • 1 c onion, chopped
  • 12 c soy flour
  • 1 t garlic powder, or 2 cloves chopped garlic

Mix together all ingredients. Firmly pack into oven dish and bake at 180o for 1 – 1 1/2 hours. May make into patties, or use in stuffed capsicum. Serve with tomato sauce, gravy or spaghetti sauce.

 

 

                                                     Tofu Cream

   This cream is very good on bread and salads where you normally use yogurt or sour cream.

  • 800 g medium fine tofu
  • 6 T flaxseed oil
  • 6 T coconut cream
  • Juice of 1 lemon
  • Salt to taste (1 t)
  • 1 T lecithin granules
  • 12 t vanilla essence

Method:
Squeeze tofu through cheese cloth until most liquid is extracted.Put into blender together with all other ingredients.

Blend on high speed,using a spatula to turn until tofu is smooth like sour cream. Store in fridge.

This recipe can also be used with boiled or baked potatoes.For this purpose I would add the following ingredients:

  • 2 gherkins finely chopped
  • 1 bunch of dill chopped
  • 4 spring onions diced fine
  • Some capers (optional)
